A big shout out to @Claire_elise96 for sharing this amazing Blueberry & Rosemary Tart recipe she made for her son Ace.
This one is great for a Sunday brunch or even a lunchbox treat.
BLUEBERRY & ROSEMARY TARTS
Puff pastry base:
Ingredients:
- 2 cups all-purpose flour
- 1 teaspoon salt
- 1 1/4 cups unsalted butter (2 1/2 sticks)
- 1/2 cup cold water
Instructions:
- Place the flour and salt in a large bowl and mix until combined.
- Cut the butter into 1/4-inch slices and add to the flour mixture, tossing to coat.
- Stir in the cold water until a thick dough forms.
- Gather the dough into a ball, and wrap in plastic wrap.
- Chill for 1 hour in the fridge, or 20 to 30 minutes in the freezer. (I left mine in the fridge overnight)
Blue Berry filling & tart combined
Ingredients:
- pre made puff pastry
- 1 table spoon of blackberry jam (or any jam of your choosing)
- 1/2 cup of blueberries
- 10g of butter
- 2 teaspoons of icing sugar
- ice cream to serve
Method:
- Preheat oven to 220°C. Line a baking tray with baking paper. Sprinkle flour and roll out your pastry to make one large square. Cut the pastry into quarters to make 4 squares. Place on the tray.
- Use a sharp knife to cut a thin border about 5mm in from the edge of the pastry (not cutting all the way through).
- Brush pastry with jam. Top with blueberries. Brush with butter and sprinkle with sugar.
- Bake for 15 minutes until golden
- Serve in our Bear Suction Plate in Sand with ice cream and enjoy 🤤
